4 Easy Vegan Breakfast Ideas
Whether you’re a die hard vegan or just wanting to try out some easy vegan recipes you should check these out. They are all super nutritious, tasty and easy to make. I get all of the special ingredients like cacao powder, chia seeds and spirulina powder in LIDL!
You can add a scoop of Vegan protein powder to any of these recipes or top them with some nut butter if you’re looking to boost your protein intake
1. Chia Pudding
One of the easiest breakfasts you can make, because you can prep it in advance and leave it in your fridge to grab in the morning. Chia seeds are one of the most nutritious foods on the planet. They're loaded with fibre, protein, omega-3 fatty acids and various micronutrients.
I mix mine with rice milk and leave it in the fridge overnight. In the morning I will top it with whatever fresh or frozen fruit I have to hand. I love to add cacao nibs or dried coconut.
2. Boosted Porridge
Since it’s been getting colder, I have switched from having my chia pudding everyday to having a bowl of nice hot porridge. I add chia seeds (duh) some coconut sugar, rice milk and cacao powder. I don’t have a full recipe post on this because I think everyone knows how to make porridge but I will leave the measurements below
40g Organic Oats - The best ones I have tried are the ones from Tesco!
2 Tablespoons Chia Seeds
Coconut Sugar - to taste
1 Tablespoon Cacao Powder
1 + 1/2 Cups Rice Milk
3. Smoothie Bowl
Really nice in summer but a bit harder to enjoy during the winter brrrr - during winter I will drink this instead of having it as a smoothie bowl. You can basically add any frozen fruit that you like. For that deep green, I have used spirulina powder. To blend everything together I have just thrown everything in my Nutribullet. You can also top it with whatever you like, here I have used dried coconut, chia seeds and banana. I have my recipe linked here.
4. Pancakes
Who doesn’t love pancakes for breakfast. These pancakes are loaded with fibre and can be topped with whatever fresh/frozen fruits you have to hand. I topped these with some frozen cherries that I had in my freezer. I just warmed them up with some water and coconut sugar on the hob. I have my recipe linked here.
