VEGAN CHIA PUDDING | 2 INGREDIENTS

One of my new go to breakfasts. So easy to prepare the night before and so delicious! I have tried a couple of different milks, almond, coconut and I’ve found Rice Milk to be the best. It’s very light and has a subtle sweetness which means you don’t need to add sweetener.

For the toppings, my favourites are cacao nibs (adds a nice crunch) strawberries and dried coconut. I also have been dehydrating fruits at home during isolation, so instead of fresh strawberries which tend so go bad quite quick, dried strawberries work really well too. But feel free to add whatever fruits/nuts you prefer.

Chia seeds have lots of health benefits and make a for a very filling breakfast. Let me know if you try this and if you love it as much as me!
