Fluffy Vegan Pancakes | Recipe

Inspired by my blog post yesterday, talking about the best vegan brunch spots in Amsterdam, I have to share with you my easy recipe for delicious, fluffy, vegan pancakes!


Ingredients

- 1 & 1/2 cups flour

- 1 Teaspoon baking powder

- 3 Tablespoons chia seeds

- 2 Tablespoons sweetener of your choice

- 1 & 1/2 Cup plant-based milk

- 1 Teaspoon apple cider vinegar

- 1 Teaspoon vanilla extract (Optional)

- Pinch of salt

- Coconut oil for greasing

- Toppings of your choice

Mix all the ingredients together. Cook until bubbles form on top and flip (about 3 minutes per side) Repeat until batter is all gone. Serve with toppings of your choice, we had them with cherries and chia seeds sprinkled on top!
