Vegan Mac + Cheese

That creamy cheesy sauce can be hard to replicate without dairy products. I’ve seen recipes that use different vegetables like carrots, but I’ve found that potatoes really add to the creaminess.

As well as the cashews, as mentioned make sure to soak them for a minimum of one hour in boiling water, this will help to soften them and they will blend easier.

To make a true Mac + Cheese, use macaroni pasta, but as pictured below - rigatoni works well too and I have also tried it with spirali


This recipe will make enough sauce for about 8 servings depending on how saucy you like your pasta!
