VEGETARIAN SUSHI
These are some of the things that you will need, I just pick up the 'Obento' brand as it's in our local shop. You can find the Sushi Mat and the Wasabi Powder in your local Asian Market!

To begin, start by cooking your sushi rice, its much sticker than normal rice so it will help the roll stay together! Keep in mind you need to rice to be cool when you are making your rolls. I would normally cook the rice in the morning/afternoon if we are having sushi that evening. Wash the rice (1 cup = 3 rolls) under running water, until there is no more starch coming out of it. After put the rice into pot, add a little bit more water than rice (about 20% more water than rice). Make sure not to put too much water, or it'll turn out really doughy.
The rice should be cooked on high at first, stir every minute or two, until the water boils. Then, lower the heat and cover the lid. After 5mins, check and see if there's no water there, just cooked rice, that means the rice is ready. If not, check back every minute, making sure not to burn the rice at the bottom!!
When cooked, take the rice out and leave to cool in a bowl.
In order for the rice to taste like sushi rice (and not like ordinary rice), you need to add rice vinegar to it right after it is taken out of the pot.
For 3 cups of (uncooked) rice, use ½ cup of rice vinegar, 2 tablespoons of sugar, 1 tablespoon of oil, and 2 teaspoons of salt. Mix together in a pan over heat until its all melted together! Pour this over the rice and mix well. Leave to cool.
When your rice is cool, get your sushi paper and putting the glossy side onto the mat, load it up with rice and whatever your other toppings are. I use avocado/cucumber and sometimes cream cheese! I also like to put wasabi inside the sushi roll, but take it easy with the wasabi! Toasted sesame seeds are really nice to add inside too!
Start rolling!! It takes practise to make the perfect roll so don't be sad if it doesn't turn out great! It will still taste good!
When cutting the rolls, use a sharp knife and rinse with water in-between slices!
Serve your sushi with soy sauce/pickled ginger/wasabi!
