Easy Focaccia | Vegan

What’s better than fresh bread? Not to mention fresh Focaccia? It’s so good, really easy to make and perfect with a salad! I’ve made this one with roasted vegetables but you can do really simple with olive oil and sea salt or whatever you want! Another fab thing about this recipe is that it’s VEGAN. I think we can all do with a bit more vegan in our lives so give this a go! You will need, 

 

 

Time needed - 2hrs

(First Make Dough, While dough is rising make toppings) 

 

For the Toppings - Roast Veg 

1 Aubergine

1/2 Courgette

1 Red Pepper

1 small can sweetcorn 

Olive Oil

 

Cut the vegetables into small pieces, mix all the vegetables together with olive oil and a pinch of salt, place in the oven on a medium-high heat until cooked through and roasted!!

 

For the dough.. 

235 ml warm water

dry yeast 1 packet

1/4 teaspoon sugar 

325 grams plain flour

1 teaspoon salt

 

In a large bowl, combine the warm water, yeast, and sugar. Mix together and let stand for 5 minutes. Add a small bit of your flour to make a paste. Let stand for 10 minutes. Add in the rest of your flour + salt and form a dough. On a floured worktop knead the dough and then place it in a bowl. Cover with a damp towel and leave in a warm place for 1 hr. (Beside fireplace, under radiator - anywhere WARM) After 1 hr your dough should have risen significantly, take it from the bowl and roll into desired shape - not too thin! Add your toppings. Bake at 230C in oven until golden brown, about 15 to 20 minutes
